a random smattering: fireworks, food, & friends

So, yes, the 4th was a week ago but I couldn't resist sharing some firework photos with you. They were so much fun to shoot!  It was hard to lower the camera from my eye because maybe the next one would be a doozy!

On Thursday, we took advantage of the hot and still out on Lake Michigan again.  Daddy allowed his firstborn to take over the wheel while this Mama's eyes filled with the vision of him as a grown-up.  Most certainly, it will come too soon.  Grace, Lord....

That pasta salad I was enjoying on the beach had it's own story. Earlier that morning, my friend, Aimee, had posted on Facebook that she was going to make caprese pasta salad for lunch that day. Oooo, I knew I had all the ingredients for it, so I made it too.  Aimee and I had fun cooking the same thing at the same time miles apart and we sent each other pics.  Food and friend love...and, haha, I just noticed the stripe love, too! :)

Speaking of food, I revisited a yummy recipe the other night and it was a big hit.  Ree's Cajun Chicken Pasta is soooo delicious.  I took the lazy easy way out and substituted shredded meat from a hot rotisserie chicken.  My hubbie diced up the veggies while I drove the .9 miles to Costco to pick up one of their tasty yet certainly sodium-laden chickens.

Because Bulgarian feta is SO authentic to cajun cooking delectable, I added a sprinkling on top along with some garden chives. Paired with fresh bread toasted with olive oil, it was one of my favorite meals.  And the leftovers for lunch today? Bonus!
